In Kosovo, like everywhere in the Balkans, pepper is a king among the vegetables. It can be red, green, yellow, raw in a salad, cooked with cream in the oven ( Speca me kos ), melted in its famous ajvar form, stuffed with meat or bottled ( pickles in vinegar), pepper is somewhere on all the good tables. Besides, all the communities here in Kosovo and in the region share culinary traditions and recipies taht deserve to be known!
